Perhaps the most fundamental and least talked about stage of the coffee value chain is the roasting stage. Coffee is commercially roasted with drum coffee roasters. This equipment reliably delivers an even roast on the beans. Essentially, this is when the coffee develops its distinctive characteristics that determine taste and aroma. It’s important to note that Speciality coffee has brought a shift in how the roasting process is done. What used to be mainly full dark roast by most coffee roasters has now evolved into a variety of roasting profiles ranging from medium to darker roasts. The result is an array of desirable effects on the taste, aroma, and body of the coffee.

Lighter roasts have brighter tastes, higher acidity and fruity notes while darker roasts have much lower acidity with nutty and chocolatey tastes. Since coffee preferences change between people and regions, there are very many roast profiles available that can produce unique blends. It is however important to know the bean quality and age will play a big part in the chemical transformation of the beans. After Carefully sourcing specialty AA coffee, Senteu Blend, the flagship roast profile for Coffee Morans is curated to have the bold nutty flavors and bright fruity notes that are characteristic of Kenyan Coffee while moderating the acidity the native bean is largely known for. This can be a tricky process as it requires constant regulation of temperature that is conducive to the right chemical reactions that produce the flavorful Kenyan coffee brew.

The early crop harvest period has recently begun throughout east Africa and this is the time coffee yield from the highest altitudes is harvested.
